With Thanksgiving just a week away, let's be honest: while the turkey is considered the "main event," the holiday is truly all about the side dishes. When I was young my nephew once said, "I love the stuffing, I don't even care if I get turkey!"

This stuffing recipe will probably be the first dish empty on your table. It is packed with flavor!


Avoid placing hot stuffing inside a turkey; instead, prepare the stuffing in advance. You can do this one or two days ahead of time.


One of the elements that give this stuffing its rich flavor is the homemade turkey stock. While you can resort to store-bought stock if necessary, making turkey stock is simple and can be done while preparing other dishes. Simply gather the neck, liver, and other parts from your turkey, and place them in a large pot with an onion, celery stalks (including the leaves), salt, peppercorns, celery salt and a couple of bay leaves. Cover it all with water. Bring the mixture to a boil, then let it simmer for at least an hour. Strain out the solids, and you'll have turkey stock ready for your stuffing and leftover turkey soup!
