Sausage, Potato & Leek Frittata

Hi friends! I’m back today with a great breakfast recipe. You can also have it as breakfast for dinner! Or even brunch, if you’r fancy and you have brunch. Also, feel free to use this recipe as a base, and choose any veggies you want. You can trade out the sausage for different meat, and the potato and leeks for different veggies. The possibilities are endless!! Enjoy!


For this recipe you’ll need sausage, shredded cheese, leeks, eggs, Parmesan cheese, and frozen hash brown potatoes.
Prep the the leeks by slicing them and washing thoroughly. Leeks get so dirty when they're growing, so wash very well. Add about a tablespoon of butter to your pan on medium heat. I like to use a cast iron pan, because I'm going to trasnfer it into the oven, but any oven safe pan will do. Which reminds me, preheat your oven to 350 degrees!
Brown up your ground sausage.
Once the sausage is cooked through, drain some of the grease if you want. You can always use turkey sausage too!
Next add your potatoes and leeks. Cook until soft, about 8-10 minutes. Stir frequently.

In a large bowl crack in 12 eggs, then whisk in heavy cream salt, and pepper. Next stir in about half – 3/4 of the of the shredded cheese, saving some for the top. I like to use Monterrey jack , but any cheese will work. Make sure all the yolks are broken up. When the potatoes and leeks are done, gently add in the egg mixture

Turn the heat off and top with the remainder of the shredded cheese. Bake at 350 degrees for 20-30 minutes, or until the eggs are done and the edge is beginning to crisp up.
After you remove the frittata from the oven, sprinkle with Parmesan cheese and you can garnish with scallions. Enjoy!
